You can feel this wine’s ripeness through the prism of its savoury detail. Amongst Golden Delicious apples and yellow peaches, what’s important is the herbaceous lift, citrus essential oils, mineral tension, chicken fat, waxy tone, lavender leaf, pink grapefruit, almonds and sautéed mushrooms. The wine has ripeness and freshness that go hand in hand; the umami-ness of flavour is an integral part of this wine, terroir if you will, not an age effect. Such a delicious drink."
