2021 Chablis “Montée de Tonnerre” (90-93)
(from a huge 2.74 ha parcel in Montée de Tonnerre proper and Pied d’Aloup). A background whiff of menthol is present on the cool and equally airy aromas of white orchard fruit, iodine and oyster shell hints. The racy, saline and utterly delicious middleweight flavors also exude evident salinity on the bone-dry, citrusy and tightly wound finale. This fine effort is really quite stylish though one that will definitely need at least some patience. (90-93)/2028+

The best Servin wines indeed strike a deft balance between richness of texture on the one hand and vivacity and clarity on the other…. I can appreciate to some extent why Servin is fearless of fat in his wines. Still, my impression is that nobody makes wines like these in Chablis today. ANTONIO GALLONI
