2021 Bodega Clandestina 'Sense Papers'

100% Xarel·lo from the Fassina vineyard (56 years old) in Sant Sebastià dels Gorgs and as a novelty this year he incorporated grapes from the Molinet vineyard (62 years old), also located in Sant Sebastià. Three separate harvests were completed in September, each approximately a week apart. The first was direct pressed, the 2^nd received a 24 hour skin contact, and the 3^rd had three weeks skin contact. The first two were aged in demijohn for 4 months, and the 3^rd in concrete for 4 months, before blending. Not fined or filtered. Zero added SO2. 12% alc.
