The Grenache and Cinsault are placed in a tank whole bunch and the Syrah is direct pressed to cover the other grapes. This creates a type of carbonic maceration without the need for added CO2. Macerated for 10 days, then pressed back into tank. Aged for 6 months in stainless steel. No filtration nor fining.
