The vines, ranging from 20 to 60 years of age, are farmed using organic and biodynamic practices. In the winery, whole clusters are gently pressed in a pneumatic press, followed by static settling of the juice. The Chardonnay and Savagnin are blended after pressing and co-fermented with indigenous yeasts.
