Crafted from a blend of Chardonnay and Savagnin grown in the “Petit Curoulet” vineyard, a 0.75-hectare southwest-facing hillside of blue marl at an altitude of 350 metres. The vines, ranging from 20 to 60 years of age, are farmed using organic and biodynamic practices. In the winery, whole clusters are gently pressed in a pneumatic press, followed by static settling of the juice. The Chardonnay and Savagnin are blended after pressing and co-fermented with indigenous yeasts. Alcoholic fermentation, malolactic fermentation, and maturation all take place in 20-hectolitre wooden tuns, allowing the wine to express the unique character of its terroir.
