The 2020 is a blend of 2/3 Chardonnay and 1/3 Savagnin. Direct press into tank. Spontaneous fermentation with indigenous yeasts. Malolactic fermentation completed in foudre. Zero SO2. One year in aged foudre. Second fermentation initiated, then 18 months on lees in bottle. Riddled daily. Disgorged. Zero (Extra Brut / Brut Nature). Zero addition of SO2. 12.5%.
