The stunning Paitin Dolcetto is from 40 year old vines in the Rivoli - a region in the South of Alba (between Barolo & Barbaresco) that consists of three hills dominated by three old house (Cascina) Rivoli, Ca Veja and Bonina. From this hill is where Paitin produce their Dolcetto. The white soils, here like with Nebbiolo provides for best expressions of Dolcetto. The soil consists of Marly limestone belonging to the Marne di Sant’Agata fossili sabbiose, giving the wine a mineral and almost saline trait. The wine is raised very large old Slavonian oak for six months.
